It gets its name from the saj, a traditional dome-shaped griddle used in Lebanon to bake manoushe, an everyday Lebanese food.
Ziad Mansour and Lia Satzinger opened The Lebanese Sajeria in 2016 after first introducing saj cooking to the street markets and food festivals of Amsterdam. Alongside the manoushe, they now also serve a variety of homemade soups, platters and deserts, all of which are infused with the Lebanese spirit (and flavour!)
As a child, Lia learned the importance of good food while spending time in the kitchen of her Lebanese grandparents in Vienna. She returned to cooking later in life while working as an artist in Amsterdam—graduating from her Masters studies at the Sandberg Instituut with a food truck as her final project.
Ziad was born and raised in Lebanon and moved to Amsterdam in 2007. He opened The Lebanese Sajeria with Lia after spending fifteen years in the corporate world and obtaining an MBA.
